Quinoa Salad

A light and healthy gluten-free quinoa salad thats perfect for a side dish or a light meal. Packed with fresh vegetables and zesty flavors.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

Run cold water over the quinoa several times to clean it

Put the quinoa and water in a medium-sized saucepan and bring it to a boil

Turn down the heat, cover, and let it simmer for 15 minutes, or until the quinoa is done and the water is gone

Leave it alone until its cool enough to touch

Put cooked quinoa, cucumber, cherry tomatoes, red onion, and fresh parsley in a large bowl

Add the lemon juice, salt, and pepper to a different small bowl and mix them together using a whisk

Add the dressing to the quinoa salad and mix it all together

Put it in the fridge for at least 30 minutes before you serve it

Serve as a side dish to cool you down
