Thai Coconut Broccoli Soup

A Thai-style soup that is creamy and full of flavor, made with broccoli and coconut milk. This soup is thick, warm, and full of fragrant spices.

Ingredients:

  • 1 broccoli head, chopped
  • 1 can 400ml coconut milk
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 tbsp ginger, grated
  • 2 cups vegetable broth
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp curry powder
  • Salt and pepper to taste
  • 2 tbsp coconut oil

Instructions:

In a large pot, heat coconut oil over medium heat

Add garlic, onion, and ginger

Saut until fragrant

Add chopped broccoli and cook for 5 minutes

Stir in curry powder and cook for another minute

Pour in coconut milk and vegetable broth

Bring to a simmer

Let the soup simmer for about 15 minutes until broccoli is tender

Using an immersion blender, blend the soup until smooth

Stir in soy sauce, lime juice, salt, and pepper

Taste and adjust seasoning if needed

Serve hot, garnished with chopped cilantro or sliced chili
