Skinny Broccoli Chicken Alfredo

This Skinny Broccoli Chicken Alfredo is a healthier take on the classic Chicken Alfredo. It uses Greek yogurt and Parmesan cheese to make a creamy, tasty sauce without all the extra calories. The meal is tasty and filling, and its great for a cozy night in.

Ingredients:

  • 8 oz boneless, skinless chicken breast, thinly sliced
  • 1 cup broccoli florets
  • 1 cup Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 8 oz whole wheat fettuccine pasta

Instructions:

Bring water to a boil in a large pot, and then cook the fettuccine pasta according to the directions on the package

Remove the water and set it aside

Put olive oil in a pan and heat it over medium-low heat

Mix in the garlic and cook until it smells good

Spread the chicken breast out thinly and add it to the pan

Cook until it turns golden brown and is fully cooked

Add pepper and salt

Put broccoli florets in the pan and cook them until they are just barely crisp

Turn down the heat and add the grated Parmesan cheese and Greek yogurt

Stir the mixture well and heat it all the way through

Put the cooked fettuccine in the pan and toss it around so that the Alfredo sauce covers it all

Serve hot, and if you want, top with more Parmesan cheese
