Quinoa Crusted Eggplant Parmesan Bites

These bites are a tasty take on traditional Eggplant Parmesan. They have a crunchy quinoa crust and gooey cheese inside. Great for a tasty snack or appetizer

Ingredients:

  • 1 large eggplant, thinly sliced
  • 1 cup cooked quinoa
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Preheat the oven to 400F 200C

Sprinkle eggplant slices with salt and let them sit for 10 minutes to release excess moisture

Pat dry with paper towels

In a bowl, combine quinoa, breadcrumbs, dried oregano, garlic powder, salt, and pepper

Dip each eggplant slice into the quinoa mixture, pressing gently to adhere the coating

Place the coated eggplant slices on a baking sheet lined with parchment paper

Bake for 15-20 minutes or until the quinoa crust is golden and crispy

Remove from the oven and top each slice with marinara sauce, mozzarella, and Parmesan cheese

Return to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly

Garnish with fresh basil leaves before serving
