Ingredients:
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup toffee bits
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a mixing bowl, cream together the brown sugar and softened butter until light and fluffy
Beat in the egg and vanilla extract until well combined
In a separate bowl, whisk together the flour, baking soda, and salt
Gradually add the dry ingredients to the wet ingredients, mixing until just combined
Fold in the toffee bits
Scoop tablespoon-sized portions of cookie dough and place them onto the prepared baking sheet, spacing them about 2 inches apart
Gently flatten each cookie dough portion with a fork or your fingers
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown
Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
