Healthy Spinach Grinch Muffins

These Healthy Spinach Grinch Muffins are a fun and nutritious way to enjoy your greens. Packed with fresh spinach, bananas, and whole grains, they make for a wholesome snack or breakfast option. Plus, the dark chocolate chips add a touch of indulgence. Perfect for both kids and adults

Ingredients:

  • 2 cups fresh spinach, chopped
  • 1/2 cup mashed ripe bananas
  • 1/4 cup unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup Greek yogurt
  • 1/4 cup almond milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 1/4 cup ground flaxseed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/4 cup dark chocolate chips optional

Instructions:

Preheat your oven to 350F 175C and line a muffin tin with paper liners

In a blender, combine the chopped spinach, mashed bananas, applesauce, honey, Greek yogurt, almond milk, egg, and vanilla extract

Blend until smooth

In a large mixing bowl, whisk together the whole wheat flour, rolled oats, ground flaxseed, baking powder, baking soda, salt, cinnamon, nutmeg, and allspice

Pour the wet spinach mixture into the dry ingredients and stir until just combined

If desired, fold in the dark chocolate chips

Divide the batter evenly among the muffin cups, filling each about 2/3 full

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean

Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
