Vegan Veggie Stir-Fry

This vegan veggie stir-fry is a delicious and nutritious option for those looking to achieve healthy weight loss. Packed with a variety of colorful vegetables and tofu, its high in fiber and protein while being low in calories. The savory sauce adds a burst of flavor to this satisfying meal.

Ingredients:

  • 2 cups broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 carrot, julienned
  • 1 zucchini, sliced
  • 1 cup snap peas
  • 1 cup tofu, cubed
  • 2 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp cornstarch
  • 1/4 cup vegetable broth
  • Salt and pepper to taste
  • Cooking spray or oil for stir-frying

Instructions:

Combine the vegetable broth, cornstarch, sesame oil, and soy sauce in a small bowl

Put aside

A large skillet or wok should be heated to high heat and lightly oiled or coated with cooking spray

Stir-fry the ginger and garlic until fragrant, about 30 seconds

Stir-fry the tofu cubes for approximately five minutes, or until they turn golden brown

Take out the tofu and place it aside in a skillet

Add a little more oil to the same skillet and add the bell peppers, zucchini, carrot, broccoli, and snap peas

Stir-fry the vegetables for five to seven minutes, or until they are crisp-tender

Place the cooked tofu back into the skillet and cover the tofu and veggies with the sauce

Stir-fry the ingredients for a further two to three minutes so the sauce thickens and coats them

To taste, add salt and pepper for seasoning

Mix thoroughly
