This Paleo-friendly recipe transforms ordinary vegetables into a flavorful and satisfying dish. The combination of spices adds a delicious kick while keeping the recipe clean and nutritious.

Ingredients:

  • 4 cups mixed vegetables such as bell peppers, zucchini, and carrots
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions:

Preheat the oven to 400F 200C

Chop the vegetables into bite-sized pieces

In a large bowl, toss the vegetables with olive oil, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper until evenly coated

Spread the seasoned vegetables in a single layer on a baking sheet

Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and lightly browned, stirring halfway through

Serve hot and enjoy
