Chicken and Bacon Kabobs

These Chicken and Bacon Kabobs are a delicious combination of tender chicken, smoky bacon, and colorful vegetables. They are marinated to perfection and grilled to create a flavorful and satisfying meal for any occasion.

Ingredients:

  • 1 lb boneless chicken breasts, cut into 1-inch cubes
  • 1/2 lb bacon, cut into 1-inch pieces
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Wooden skewers, soaked in water for 30 minutes

Instructions:

In a bowl, whisk together the olive oil, soy sauce, honey, garlic powder, paprika, salt, and pepper to create a marinade

Place the chicken cubes in a resealable plastic bag and pour half of the marinade over them

Seal the bag and refrigerate for at least 30 minutes, allowing the chicken to marinate

While the chicken is marinating, preheat your grill to medium-high heat

Thread the marinated chicken, bacon pieces, bell peppers, red onion, and zucchini alternately onto the soaked wooden skewers

Brush the skewers with the remaining marinade

Place the kabobs on the preheated grill and cook for about 10-15 minutes, turning occasionally, or until the chicken is cooked through and the bacon is crispy

Serve the Chicken and Bacon Kabobs hot, garnished with fresh herbs if desired
