Quinoa Fruit Salad

A light and nutritious quinoa salad with a medley of fresh fruits, dressed in a honey-lemon vinaigrette. Perfect for a healthy and delicious meal or side dish.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup strawberries, diced
  • 1 cup blueberries
  • 1 cup pineapple, diced
  • 1/2 cup mint leaves, chopped
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

In a saucepan, combine quinoa and water

Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is cooked and water is absorbed

Fluff the cooked quinoa with a fork and let it cool to room temperature

In a large bowl, combine cooled quinoa, strawberries, blueberries, pineapple, and mint leaves

In a small bowl, whisk together honey, lemon juice, olive oil, salt, and pepper to create the dressing

Pour the dressing over the quinoa and fruit mixture

Toss gently to coat everything evenly

Refrigerate the salad for at least 30 minutes to let the flavors meld together

Before serving, give the salad a final gentle toss

Garnish with additional mint leaves if desired

Serve chilled and enjoy your refreshing Quinoa Fruit Salad
