Ingredients:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/2 cup powdered sugar for coating
Instructions:
In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy
Add the vanilla extract, lemon zest, and lemon juice to the bowl, and mix until well combined
Gradually add the all-purpose flour and salt to the wet ingredients, mixing until a soft dough forms
Cover the dough and refrigerate for at least 30 minutes to firm up
Preheat your oven to 350F 175C and line a baking sheet with parchment paper
Using your hands, roll the chilled dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet
Bake the cookies in the preheated oven for 12-15 minutes or until the edges are lightly golden
Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes
While the cookies are still warm, gently roll them in the remaining 1/2 cup of powdered sugar until fully coated
Transfer the coated cookies to a wire rack to cool completely
Once cooled, you can dust the cookies with more powdered sugar for an extra touch
