Roasted Asparagus and Peppers Salad

This roasted asparagus and pepper salad is simple to make and full of superfoods that are good for you. When you mix roasted asparagus, bright bell peppers, and fresh greens, you get a tasty and healthy dish thats great for any meal.

Ingredients:

  • 1 bunch of asparagus, trimmed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed greens e

  • , spinach, arugula, kale
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons balsamic vinaigrette dressing
  • 1 tablespoon chopped fresh basil leaves

Instructions:

Preheat your oven to 425F 220C

On a baking sheet, toss the trimmed asparagus and sliced bell peppers with olive oil, salt, and pepper

Roast in the preheated oven for about 15-20 minutes or until the vegetables are tender and slightly caramelized

Let them cool

In a large salad bowl, combine the mixed greens, cherry tomatoes, red onion, and crumbled feta cheese

Add the roasted asparagus and peppers to the salad

Drizzle the balsamic vinaigrette dressing over the salad and toss to combine all the ingredients

Garnish the salad with chopped fresh basil leaves

Serve immediately and enjoy
