Gluten-Free Quinoa Cookies

Not only do these gluten-free quinoa cookies taste great, they are also vegan, gluten-free, oil-free, and very simple to make. Because they have quinoa, almond butter, and dairy-free chocolate chips, they are healthy and dont make you feel bad.

Ingredients:

  • 1 cup cooked quinoa, cooled
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1 flax egg 1 tablespoon ground flaxseed 3 tablespoons water
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup dairy-free chocolate chips
  • 1/3 cup chopped nuts optional

Instructions:

Preheat your oven to 350F 175C and line a baking sheet with parchment paper

In a large mixing bowl, combine the cooked quinoa, almond butter, maple syrup, flax egg, vanilla extract, baking powder, and salt

Mix well until all ingredients are thoroughly combined

Fold in the dairy-free chocolate chips and chopped nuts if using

Using a spoon or your hands, form the dough into cookies and place them on the prepared baking sheet

You can flatten them slightly with a fork if you prefer thinner cookies

Bake in the preheated oven for 12-15 minutes or until the edges are golden brown

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

Once cooled, enjoy your delicious gluten-free quinoa cookies
