A healthy and comforting soup made with tender chicken gizzards, earthy mushrooms, and fragrant vegetables in a tasty chicken broth.
Ingredients:
- 1 lb chicken gizzards, cleaned and trimmed
- 8 cups chicken broth
- 1 cup sliced mushrooms
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onions and minced garlic, saut until fragrant
Add chicken gizzards and cook until browned
Pour in chicken broth and bring to a boil
Reduce heat to low, cover, and simmer for 30 minutes
Add sliced mushrooms, diced carrots, and celery to the pot
Season with salt and pepper to taste
Simmer for an additional 15-20 minutes until vegetables are tender
Serve hot, garnished with fresh parsley
