Ingredients:
- 1 lb ground turkey
- 1 egg
- 1/4 cup almond flour
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups chicken or vegetable broth
- 1 can 14 oz diced tomatoes
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 2 cups spinach leaves
- 2 cloves garlic, minced
- 1/2 tsp dried thyme
- Salt and pepper, to taste
Instructions:
In a bowl, combine ground turkey, egg, almond flour, garlic powder, onion powder, oregano, basil, salt, and pepper
Mix well and form into mini meatballs
In a crockpot, add broth, diced tomatoes, carrots, celery, onion, spinach, garlic, and thyme
Stir to combine
Gently add the mini turkey meatballs into the crockpot
Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until meatballs are cooked through and vegetables are tender
Season with salt and pepper to taste before serving
