Made with sweet potatoes, white potatoes, and diced ham, this comforting and creamy potato soup is ideal for a cosy Paleo and Whole 30 dinner.
Ingredients:
- 4 cups diced sweet potatoes
- 4 cups diced white potatoes
- 2 cups diced cooked ham
- 1 onion, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 cup full-fat coconut milk
- 2 tablespoons ghee or coconut oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions:
In a large pot, heat ghee or coconut oil over medium heat
Add diced onion and garlic, saut until softened, about 5 minutes
Add diced sweet potatoes, white potatoes, and ham to the pot
Pour in chicken broth and bring to a simmer
Cover and cook until potatoes are fork-tender, about 15-20 minutes
Using an immersion blender, blend soup until creamy and smooth
Stir in coconut milk and dried thyme, season with salt and pepper to taste
Simmer for an additional 5 minutes, then serve hot
