Ingredients:
- 1 5-pound boneless ribeye roast
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
Instructions:
Preheat oven to 450F 230C
In a small bowl, mix together minced garlic, olive oil, salt, pepper, thyme, and rosemary to create a paste
Rub the paste all over the ribeye roast, ensuring its evenly coated
Place the roast on a rack in a roasting pan, fat side up
Roast in the preheated oven for 15 minutes, then reduce the temperature to 325F 165C
Continue roasting until a meat thermometer inserted into the center of the roast reads 135F 57C for medium-rare, about 1 hour and 15 minutes
Remove from the oven and let it rest for 15 minutes before slicing
Slice the roast thinly against the grain and serve
