Caramelized Onion, Spinach, and Avocado Quesadillas

These quesadillas are packed with flavor and feature caramelized onions, fresh spinach, creamy avocados, and melted cheese. They make for a satisfying and tasty meal thats easy to prepare.

Ingredients:

  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cups fresh spinach leaves
  • 2 ripe avocados, sliced
  • 4 large flour tortillas
  • 2 cups shredded cheese e

  • , cheddar or Monterey Jack
  • Salt and pepper to taste
  • Optional toppings: sour cream, salsa, or guacamole

Instructions:

In a pan over medium heat, warm up 1 tablespoon of olive oil

Add the thinly sliced onions to the pan and stir them around a few times a while

Cook for about 20 to 25 minutes, or until they turn caramelized and brown

Add pepper and salt to taste

Take the onions out of the pan where they were caramelized and set them aside

Add the fresh spinach leaves to the same pan after adding the last tablespoon of olive oil

About two to three minutes of cooking should be enough to make the spinach soft

Take it off the heat

Lay out a tortilla on a flat surface and top it with some shredded cheese

Add slices of avocado, caramelized onions, and wilted spinach on top

To make a quesadilla sandwich, put another tortilla on top

Warm up a clean griddle or skillet over medium-low heat and spray it with cooking spray or oil

Carefully move the quesadilla to the skillet and cook for three to four minutes, or until the bottom tortilla is golden and crispy and the cheese starts to melt

It will take another 34 minutes of cooking on the other side until its golden and the cheese is melted

Take the quesadilla out of the pan and let it cool for one minute

Then cut it into wedges

Serve hot with sour cream, salsa, guacamole, or other toppings of your choice
